Their willingness for higher quality and modernisation helped giving recognition for Ucles as a new ‘Designation of Origin’. Jesús Cantarero aims to produce authentic, contemporary wines of great purity and freshness. In order to reach this goal, the vines are organically grown, taking advantage of the low levels of disease in this dry, continental climate. No pesticides are used, organic manure is the only fertilizer applied. |
